Banana Muffins w/ Chocolate swirls
1 cup whole wheat flour
3/4 c. white flour
1/4 c. instant oatmeal
1 tbsp cinnamon
1 tsp ginger
1/2 tsp allspice
2 1/2 tsp baking powder
1/4 tsp baking soda
3 tbsp oil
1 egg
5 tbsp sugar
1 cup mashed very ripe bananas
3/4 c. milk
1 cube semi-sweet chocolate (shaved)
Bake in preheated 350 degree oven for 18 to 20 minutes
Makes 12 regular muffins
Directions:
Combine all dry ingredients in one big bowl and whisk to blend everything. In a second bowl mash bananas and add sugar, oil, egg, and milk. Then,whisk everything together well blended. Shave the chocolate cube and set aside. Now, make a well in the bowl with dry ingredients and add the liquids in the middle. Also, add the shaved chocolate to this. Finally, take a spoon a stir just enough to moisten the flour. Fill muffin tin three fourths full and bake.
