Ingredients:
- 1 whole wheat tortilla
- 1/4 of an avocado, sliced
- 1 tbsp onion, cubed
- 2 tbsp tomato, diced, or salsa
- 1/2-2/3 cup refried beans (Basically stuff the burrito with as much beans as possible.)
- 1 small bundle of spinach or any combination of greens such as; romaine lettuce, baby kale, and/or cabbage
Directions:
- Start with heating up the flour tortilla on a comal or skillet.
- Place the beans on the belly side of the tortilla and spread vertically.
- Add the spinach, then top it off with all the other veggies.
- Take your beautiful creation and fold the edges to keep the food from spilling and roll it up. It is okay if it does not fold all the way.
- Finally, cut it in half to see how colorful and healthy-looking it truly is.

Simple chicken salad
I am not much of a salad eater. I do not understand how they can be filling, but they really can be if you combine the right among of crunch from the vegetables and make it filling with the salad dressing and protein.
I was impressed by the richness the avocado brought to this salad. It really gave it some character.

Step one: wash 3 leaves of Romaine lettuce, 1/2 carrot, tomato.
Step two: cut up some store bought rotisserie chicken breast. Shred the carrot and dice the tomato.
Step three: Prep the avocado by adding lemon/lime juice to it and a pinch of salt and/or pepper.
Step four: Find an awesome plate.
Step five: Put it all together.
Step six: Add your favorite dressing or make your own: such as this one--
